Recipe for Pitcher-Perfect Sweet Tea – “From the Kitchen of the Deep South”

Ingredients 2 quarts of water 1/2 to 3/4 cup of granulated sugar, or to taste 5 to 6 tea bags of Luzianne Instructions Whisk together water and sugar in a big pot and bring to a boil. Remove from heat, add the tea bags, and steep for 15 minutes with the lid on.
Remove tea bags, allow liquid to slightly cool, and then pour into a half-gallon pitcher. No more water or ice should be added. Pour into glasses filled with ice to serve. Recipe Notes: Two dollars per gallon. If you have a large enough microwave-safe container with a cover, you may make the simple syrup in the microwave.
Two family-sized tea bags may be used for six teabags to get a more strong flavor. Cane Sugar Sugary iced tea: Replace the granulated sugar with turbinado sugar made from 100% pure, raw cane sugar (such as Sugar in the Raw). It is my preferred sugar to use.
- Sweet Tea Concentrated Syrup: Prepare simple syrup as described above, except use 3 cups each of water and sugar and 10 to 12 tea bags, depending on desired strength.
- Steep for 15 minutes, then cool.
- Do not add water or ice.
- Refrigerate.
- To create a pitcher of 1-1/2 quarts, add 3/4 cup of the syrup (or to taste) to 6 cups of water.
For individual glasses, fill with ice and top with ice-cold water, then add several teaspoons of syrup based on desired color and flavor. The origin is http://deepsouthdish.com. - 2 tea bags sized for a family Six smaller bags
- 8 cups of water
- 1 cup sugar for a sweeter taste, use 34 cup
- ▢ ⅛ teaspoon baking soda
- Bring 2 cups of water to a boil.
- Take boiling water off the heat.
- Stir in 1 cup of sugar and 1/8 teaspoon of baking soda (optional
- see notes) until dissolved.
- Add two tea bags of the family size to the water. Steep the tea for 15 minutes for a robust flavor or 10 minutes for a milder one.
- Take out the tea bags.
- Add tea and the remaining 6 cups of water to your pitcher. Stir.
- Refrigerate until serving time.
This recipe makes two quarts. Notes:
- Some Southerners include baking soda in their recipes. This will remove any bitterness from the tannins released by the black tea leaves. I have learnt this technique throughout the previous few years. There will be no flavor of baking soda. My other relatives do not include it, therefore this is entirely optional.
- To brew a gallon of tea, bring 2 cups of water to a boil, add 2 cups of sugar and 1/8 teaspoon of baking soda after removing from heat, and then steep 4 family-sized tea bags in 14 cups of cool water.
- When removing the tea bags, never pinch them. This may cause tannins to be released and create a bitter flavor.
- Never pour hot tea into a pitcher made of glass. It might cause the pitcher to break. If using a glass pitcher, allow the tea to cool before serving.
- For unsweetened tea, simply omit the sugar from the same instructions.
