What is the weight of 2 cups of packed brown sugar?
I wish we were all in agreement, but at least our disagreements are little. A ‘packed’ cup of brown sugar in my kitchen and America’s Test Kitchen is 7 ounces/200 grams. I periodically request a cup that is loosely packed and weights 6 1/2 ounces/185 grams. The weight of Stella’s packed cup is 8 ounces/225 grams.
How is brown sugar measured?
Unlike white sugar and powdered sugar, brown sugar contains molasses, making it rather wet. The molasses causes the sugar to clump, therefore when measuring brown sugar, it is important to pack it into a dry measuring cup or other measuring device to eliminate air pockets.
