Shrimp Fried Rice (makes 4 to 6 servings)
Ingredients
1 1/2 cups long grain white rice
2 eggs
2 green onions
2 cloves garlic-chopped
1 tablespoon Longjing (Dragonwell) green tea
1 cup cooked shrimp
3 tablespoons canola cooking oil
1 medium sized tomato-chopped/medium-
small pieces
Salt and pepper to taste
Directions
Cook 1 1/2 cups white rice as per package directions.*
*Add 1 tablespoon Longjing green tea to boiling water with
rice OR add later and stir fry with onion and garlic.
Set rice aside when done cooking.
Chop 1 green onion and add to eggs.
Beat eggs and onion, add salt and pepper to taste
Heat 2 tablespoons cooking oil in fry pan and add egg mixture.
Cook eggs through until firm.
Break eggs apart into small pieces and set aside.
Heat 1 remaining tablespoon cooking oil in fry pan over medium heat.
Add garlic and second chopped green onion and tea* and stir fry about 1 minute.
*(OR add tea to boiling water w/rice).
Add shrimp and chopped tomato and stir fry about 1 minute.
Add in rice and eggs and heat through all.
Season with salt and pepper if desired.
